Sfoglini is a New York producer of small batch, freshly extruded pastas made from the finest organic flours grown in America. We are a company committed to building regional grain economies through every bag of pasta that we sell. We use traditional Italian bronze-plate extrusion processes which give our pasta a textured, porous surface and we air dry at low temperatures to preserve nutrition and flavor. Sfoglini also creates a number of unique seasonal pastas using local ingredients and spices from farms, city gardens and restaurants.
