JOB TITLE:                   R&D Food Scientist

REPORTS TO:              Director of R&D

 

BASIC JOB DESCRIPTION:

The R&D Food Scientist will be primarily responsible for new product development and existing product quality improvement on Day-Lee Foods’ core businesses.  This person will perform R&D activities lead to achieving departmental goal, developing new product from concepts to commercialization, continuously improving quality, process, and cost of existing products, and providing technical support to organization.  He/she will be in need of close communication across functions not limited to the marketing, production, and quality teams to deliver right results.  This position will report to the Director of R&D.

 

RESPONSIBILITIES:

·         Create new product recipes which include formula, process, ingredients and product specification

·         Conduct bench top testing and production scale-up test and oversee live production run for product development

·         Work with a culinary chef to create new idea, prototype and formula to be able to product in production line

·         Work with a culinary chef to develop cooking instructions and to innovate new cooking methods

·         Verify cooking instruction as needed

·         Research new ideas, trends and technologies to develop new products, manufacturing processes improvement, quality improvement and cost savings

·         Develop new products in meeting cost and quality targets as well as other parameters in timely manners

·         Design standard manufacturing parameters, quality monitoring scheme, and ingredient and finished product specification by closely working with production and quality team, based on certain guidance

·         Interface with production, quality assurance/control, marketing, procurement, operation, and sales in the course of product and process development

·         Maintain awareness of market food trends and comparative products from all major channels, and analyze and report findings from competitor product analysis

·         Conduct sensory evaluation test as needed

·         Visit possible co-packing/co-manufacturing companies

·         Keep recording all R&D tasks in good manner and organize R&D documents neatly

·         Keep R&D kitchen/lab in good condition, not limited to keeping equipment in good condition, cleaning daily activities and maintaining necessary inventories.

 

EDUCATION, SKILL AND EXPERIENCE:

·         Preferred Master’s or relevant degree in Food Science or a related field

·         3-5 years’ experience in food R&D with at least 2-3 years’ experience in meat industry
